By now you would know my love for dips, sauces and spreads. This one has topped my favorites list now, very easy to make and I can challenge any store brought dip which can compete with my home made Hummus.
The name of this dish is so evidently calling it out as a middle eastern dish, but before claiming that I thought to do a research in google to find the origin of this one, basically a peek into its bloodline. Then I got to understand there is equal confusion in google too, as many of them claim this gorgeousness to be part of their family. As of today the claimers are Greek and Arabs. A fact study is more promising to Egypt though.
So enough of history, I am not the best person in History as I remember how hard I was making sure to score marks for History in my schooling days. The recipe is quite simple and highlight is its 100% homemade. When I say that I mean to say that the Tahini which went inside is also made at home by me :P
This is a great dip for anything or topping up salads. I used to have this with cut veggies, pita chips, salad toppings everything. There is not even a sign of this remaining now, and it is time to make my next batch.
So lets start with making Hummus now.
Ingredients :
Chickpeas soaked overnight and
pressure cooked for 4 to 5 whistles. - 2 cups
Ginger garlic paste - 1 tbsp
Garlic pods - 7 to 8
Home made Tahini - 2 tbsp
Pink Himalayan salt per taste
Lemon juice - of 1 big lemon
Sesame oil - 1 tbsp
Chilly flakes - 1 tsp
Pickled paprika and Jalapeno a few
Method:
Grind all of ingredients except for drizzle until smooth paste. You can keep it chunky if you prefer. Add the chickpea boiled water (Aquafaba) as required for a smooth paste.
Take the hummus in a bowl for serving or packing. Top up with hot sesame oil, chilly flakes and pickled paprika and jalapeno.
You may be wondering why sesame oil and not olive oil which is the traditional one. But addition of Tahini makes more sense to have Sesame oil in this for me. You know being a software engineer, my mind always tries to find the logic behind things :P
Anyways, try this yumminess and I guarantee you won't go for store brought Hummus after this :)
You can even top with some freshly chopped cilantro, parsley, dill, basil etc as per your taste.
