When mind wants to indulge in cup cakes or muffins, why hold back because of the guilt of having unhealthy food? My whole wheat flour eggless blueberry muffins is the fix for that solution😍 Ingredients : Whole wheat flour - 1 1/2cup All purpose flour - 1/2 cup Salt - 1/2 tsp Baking powder - 3 tsp Baking soda - 1 tsp Butter - 1/2 cup Brown sugar - 3/4 cup Apple cider vinegar - 1 tbsp Yogurt - 1 1/2 cup Vanilla essence - 3 tsp Milk - 1/4 cup Dried or raw blueberries - 1 cup (keep some for toppings) Whole oats - to sprinkle on top Method: Sift together dry ingredients and keep aside. Beat butter until creamy. Ads brown sugar and beat well until incorporated. Add yogurt, vanilla essence, apple cider vinegar and mix well. Add flour little by little and gently mix, do not overmix. So my close ones know how much I care about my friends, and how important is their bdays for me. This cake is such a one prepared and the constraints I have with this team is an egg less or pure veggie cake. But, I even enjoy those constraints now, which I never thought I could. Another fact being in Bangalore I can bake in a pressure cooker only, the constraint I have for myself of not having an oven here. Adding to it my induction cooker, which is my only source of cooking energy is not accepting pressure cooker baking anymore, I had to figure out another home with a gas stove connection to make this happen. I think the most enjoyed part of it was that, baking the cake with my friend's wife and his son who is really a sweet heart and you will forget everything else playing with him.
