French parfait - Breakfast Ideas

Parfaits are so easy to put together and one among the yummiest breakfast you can have. By now you would know my love for French cuisine, Parfait is another decadent healthy dessert from French Menu.  To make it more healthy Breakfast, I committed the cream cheese part of it, and used only Epigamia Artisanal Curd. So what gave me the creamy sweetness, it is my flavored Almond milk. See how easy it is to put together. 1/4th of an apple chopped, Strawberries as much as you like (you can add mix berries too), pomengranate , these are my first layer and then comes the yogurt layer which is the mix of the curd 1/4 cups and flavored almond milk 2 tbsp. Mix it together and pour over the fruits. Refrigerate overnight if possible as it will set the cream.  Pick your breakfast in morning, with some granola and sprinkle over the fruits yogurt layer, while you are ready to eat. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this. Yes, that is nothing but, our own freshly grated coconut :P Bionico is on sweeter side when compared to Parfait because of its sweetner condensed milk. Fruity Salad - with Apple, Fig, Walnut and Honey

As you guys know, salads are one among my latest research dishes and most of them were veggie/meat bowls, I discovered as the main course for lunch. I came to know from my friends that they loved those recipes and was a big hit at their homes.Coming into the factor that salad being the main course, it may feel a little awkward first time, but you don't know a salad can be so satisfying, filling and healthy alternative to many other main courses. So if you are on a diet and your appetite is more, grab a salad bowl which can help you keeping full for a longer time. So coming back to this recipe, this was my trial for a fruity bowl, which of course is not my main course, but an appetite breaker and if you feel to just munch over, and not to add more calories. Fruit cake

This fruit cake was baked for taking to Gauthappan's school as Christmas, New year gift cake, which is been like a tradition for past 4 years now.  So this time of the year he will ask for the special cake for his friends and teachers, the reason being he would be seen privileged that day at school ;) This time I thought to bake a healthy fruity cake for the kids, which tastes like heaven, fluffy and; when I say healthy I mean it. It is an extravaganza of all rich nuts and dry fruits, that I had trouble cutting the pieces :D With good quality butter, eggs, fresh cream which was my experiment, by the way :D Adding to it is home grown passion fruit juice, as replacement to liquor, as it is for kids.
