Chicken Fajita -Mexican Chicken Stir fry

This was on my Mexican themed spread day, I prepared Fajita which is a very easy and always a party hit dish. This can be a finger food, as stuffings inside breads, or even as side dish for the main course. As any other Mexican dish, this is on the high side of spiciness and should have a flaming symbol on the plate. I have seen Mexican foods being loved in India because of this spicy factor, as we Indians can't eat Bland food, lol  (no offense intended). Jokes apart, I love every cuisine, as even it is different from ours, every single cuisine has its authentic value and taste, that once you get into the soul of each food, you will see the beauty of them. The base spices are very simple and common in all dishes, it is just the addons vary per dish in their cuisine. According my food ethics, you should maintain the base recipe as is if you are preparing an authentic food of a particular cuisine. Something like, you should not prepare chicken with Chinese sauces and call it Faji...

Chicken Kebabs - Chicken Patties

I have made kebabs in many different ways before, using chicken or potatoes, and Kebabs is a loved snack at home. It is an easy dish but a perfect tea time snack and so filling that you don't have to plan a dinner separately on Kebab snacks days. But always one thing that makes me concerned about is the oil frying part of it. Kebabs should be cooked in enough oil to be dipped in it, so that it cooks evenly. This time, there was some sausages left over in my refrigerator, some salami and one piece of boneless chicken, when I was searching for ingredients for the evening snack.  I want to finish this off as it can go stale if kept for long and my vacations were almost ending. First thing came to my mind is Kebabs or Patties, but dropped the thought thinking of the unhealthy cooking and I know my boys had a lot of oils and sweets all these days.  I was thinking of an alternate snack, just when the idea of baking them has come to my mind. Fish Cutlets

Christmas season is incomplete without cutlets for a Malayali :) And for me fish cutlets, especially because of having a fish lover at home, my 9 year old boy. Gauthu likes all snacks made of fish, like fish cutlets, fish fingers, fish steaks and baked fish with chips, but not a big fan of traditional curry and fried ones.  I made a big batch of fish fries the other day and he did not appreciate it much. So whenever I am home, I used to make one of the fish dishes he prefers. This time because its Christmas season, I had a couple of such varieties in my kitchen. The fish I got this time was a freshwater one with soft flesh. All you have to take care is to buy fleshy fishes, so it would be easy to remove the thorns. Fish cutlet is such an easy snack, which can be made from a few ingredients, which are readily available at any home.
