I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.
My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this. Yes, that is nothing but, our own freshly grated coconut :P
Bionico is on sweeter side when compared to Parfait because of its sweetner condensed milk. I had my jars saved from Frozen bottle ice cream cakes, and that helped me to give my Bionico that ramp ready look. After the layers were set up, I was going crazy with the photos, as the beauty was looking so professional in the ramp, with all her elegance :-* You know I consider food as one with life, and that's the reason whenever I prepare I used to take care of its feelings, and if you put the effort of gentle compassion, you would be surprised to see how good the outcome is.
So over to the recipe. You can pretty much understand that this is just the game of gathering things and a jar of your choice. Just layer it up and you have the lady ready for the party!
Ingredients:
Fruits - I used apple, figs, banana, raisins, cherries
Oats cookies - 1 1/2 for each jar
Shredded coconut - 1 tbsp
Greek yogurt - 1/4 cup
Sugar - 1 tbsp
Condensed milk - 1 tbsp

Method:
Chop the fruits finely, except raisins.
Cook fig in 1/4 cup water, until water is evaporated. Set aside to cool.
Cook fig in 1/4 cup water, until water is evaporated. Set aside to cool.
Mix sugar with yogurt and set aside.
In a jar put cooked figs first, cherries and raisins. Then pour half yogurt, then apples and banana with raisins cherries again. Then pour 3/4 condensed milk. Add shredded coconut and crushed cookies. Pour remaining yogurt. Add raisins cherries and crushed cookies. Top with remaining condensed milk.
