Dates Carrot cake with homemade Pineapple wine

This was the cake I packed back from home for my office buddies. This is a pure vegetarian cake, as many of my friends at office are chronic vegetarians, like they don't even have eggs. So I should be so cautious in picking the ingredients for baking anything for office.   From the name itself you can see this is such a rich cake with dates, raisins, carrots, and yeah my home made pineapple wine. And what replaced the eggs? The mushy bananas and yogurt. So over to recipe now. This is in lot of terms similar to Apple cake , with a little variation for eggless touch. Choco flan - the magic cake!

Choco flan or magic cake! Yes really it's a magic. I was wondering how this cake ever happen when I saw the recipe video of this cake in YouTube. So I wanted to try it out and. See if it really works. A very simple recipe, you just need a chocolate cake batter and a flan layer which has milk, condensed milk and eggs.   For me the magic happened but in a different way. The flan was supposed to be settled down and the chocolate cake layer over it. Mine was literally an interesting magic where the flan has settled right in the middle, acting like a sandwich between the chocolate layers. It was so beautiful to see the cake when it came out of oven after 50 mins of baking. I think the consistency difference of my chocolate cake batter has made the flan settle down in middle. More trials in this would help me understand the logic behind it, I hope. That doesn't matter where the flan has settled, coz the taste was that awesome and my boys have gone crazy seeing the drooli...

Fruit cake

This fruit cake was baked for taking to Gauthappan's school as Christmas, New year gift cake, which is been like a tradition for past 4 years now.  So this time of the year he will ask for the special cake for his friends and teachers, the reason being he would be seen privileged that day at school ;) This time I thought to bake a healthy fruity cake for the kids, which tastes like heaven, fluffy and; when I say healthy I mean it. It is an extravaganza of all rich nuts and dry fruits, that I had trouble cutting the pieces :D With good quality butter, eggs, fresh cream which was my experiment, by the way :D Adding to it is home grown passion fruit juice, as replacement to liquor, as it is for kids. Passion fruit has never ditched my experimentation. Everything cooked and baked out of my terrace farm passion fruit turned out awesome in past too.
