Dry fruit burfi

Again another healthy sweet of this Diwali. Dry fruit burfi. I was so glad to see it coming out just like store brought one, but taste much better, because I used a lot of exotic dry fruits and nuts to make it an ultimate one. You can see from recipe, that there is no sweetness added too. So what more healthy than this sweet right :) Try it out and enjoy. This is the best way to make sure your kids who doesn't like dry fruits and nuts will get all the goodness and they will enjoy this to core. Ingredients: Dates - 2 cups Prunes - 1 cup Figs - 1/2 cup Raisins (white and black) - 1/4 cup Nuts - Cashews, Pistachios, Peanuts, Almonds (1/2 cup each. Peanuts 1/4 cups) Ghee - 1/2 cup Cardamom powder - 1 tsp Khus Khus or poppy seeds - 1/4 cup Method: Roast poppy seeds and keep it aside.  Now blend the dates, prunes, figs and raisins in a mixer into coarse paste.  Chop all nuts and ghee roast it for few minutes. Fruit cake

This fruit cake was baked for taking to Gauthappan's school as Christmas, New year gift cake, which is been like a tradition for past 4 years now.  So this time of the year he will ask for the special cake for his friends and teachers, the reason being he would be seen privileged that day at school ;) This time I thought to bake a healthy fruity cake for the kids, which tastes like heaven, fluffy and; when I say healthy I mean it. It is an extravaganza of all rich nuts and dry fruits, that I had trouble cutting the pieces :D With good quality butter, eggs, fresh cream which was my experiment, by the way :D Adding to it is home grown passion fruit juice, as replacement to liquor, as it is for kids.
