Grilled Chicken in Quinoa Tortilla wrap


Healthy meal preparation is so satisfying, as we know we are feeding our loved ones with clean food. When I say clean food it does mean, non processed, with balanced nutrients, and not in expense of the taste. These healthy tortilla wraps are so yummy that you will not even imagine it has so many hidden good stuffs in it.

I am like my mom, she is too smart to hide the good stuffs in whatever she prepares and we will not even know what we just ate had something which we hate if given in its form. Now I have acquired that smartness too and just few days back I prepared an Avocado Mango smoothie for one of my colleague and she told, "I hate Avocados! My mom would be surprised if she comes to know that I had Avocado. But how yummy your smoothie is ! " I was glad that I could make someone eat a healthy thing which they hated ever, and my hiding skills worked out. 

The same lady was fooled by my papaya halwa, she is a papaya hater too :P Fooling people is good sometimes, if it is for their good :P
So over to my quinoa tortilla wrap, the history behind this fooling is; I made my husband eat this wraps who is a quinoa hater :D

Ingredients

Wrap:

Cooked quinoa - 1 cup 
Whole wheat flour - 1/2 cup
Salt - 1/4 tsp
Flax seeds - 1 tbsp
Hot water as needed to form a dough


Filling 

Chopped Chicken boneless marinated in salt, pepper, curd, oregano, paprika, cumin powder - Baked until cooked well ( the recipe is available in my grilled chicken post)
Lettuce shredded - 1/4 cup
Cabbage shredded - 1/4 cup
Tomatoes chopped - 1 no
Yellow Zucchini, small slices - wilted - 1/4 of a medium one
Bell peppers - red, green, red sliced - 1/4 cup
Salt to taste
Pepper powder - 1/2 tsp
Lemon juice - 1 tbsp
Spread : 
Tahini (see my homemade Tahini recipe)
Honey - 1 tbsp
Lemon juice - 1 tbsp
Water - 1 tbsp



Method:

Grind cooked quinoa in mixer into a smooth paste and add to ingredients for the dough. Knead into a tough dough. Rest the dough for 10 mins.

Mix the ingredients for filling except chicken and keep aside. Prepare tahini dressing by combining ingredients for tahini dressing and whisking well to form a pourable spread. 

Divide the dough into equal lemon sized balls and roll into a 1/4 inch thick discs. Cook like regular chapati. Add tahini dressing and spread evenly in one side of wrap. Place some portion of filling and then the shredded chicken. Wrap it well and cut into shape of your choice. Drizzle more tahini dressing as your choice.
