Homemade Pineapple Wine

It was on my way back from my Business Trip to my homeland I realized that Christmas is almost reaching in a month and what about the wine for my Christmas spread. The grape wine I prepared 2 years back was almost over. So it is time to replenish my wine reserve. This time I wanted a different flavor, as grape wine has become so common and boring. So my mind started roaming around to figure out the best wine I could even make. Finally I have seen pineapples smiling at me in my mind and right away, I took my phone to make the request to my hubby darling to get me 5 pineapples, a new bucket and other accessories. This time I put it in a high quality plastic bucket, as the earthen pot way was a bit messy. I was a little skeptical the entire process, also because I am gonna leave her alone in 2 days here and would be back during Christmas only, when I will get to see how she turned out. But I didn't let my hope go, and went on with that idea. My achan got another respons...

The Royal Plum cake - Its plum cakes season :)

This is the time of year when I make plum cakes, and you know the reason why I call it Royal Plum cake? Ok let me tell you, because my Plum cakes would have all the nuts and dry fruits which I can catch hold of. Plum cake is the most loved cake at my home, and I used to bake big multiple batches of it and stock during this season. Made in bunt pan My amma and achan are not big fans of other cakes and they rarely even taste some of the buttery, creamy, chocolaty icing cakes I make. Same with my in laws. But Plum cakes are always their favorites and the whole family can munch over it during the family chit chats around a table. Very lately I realized that Plum cake is not an easy recipe and it is a cake choice of class. Growing up as a kid, I was thinking plum cake is the easiest and cheapest one, as it doesn't have any beautiful icing or designs around, and look so bare and naked. But realized that this cake doesn't need an advertisement, and it is the word of mou...

Chocolate scones - Christmas tree scones

I was very much looking forward to bake this one and was in my pending list for long time. I got mesmerized to it while watching Gemma's bigger bolder baking channel in YouTube. She was presenting making of Irish scones and the way she explained was so easy to comprehend and found it an interesting recipe with minimal items and effort. So I decided that scones should be part of my Christmas bakes and surprisingly this scones took it's place as the first baking I did in my new oven. But the chocolate scones is inspired from home cooking adventure you tube channel with some variations, coz I wanted a Christmas tree look for them and a melt in mouth chocolatey effect. Also the ingredients , as I m a chocolate lover, I made sure that every type of chocolate available should be in.  The name says it all, triple chocolate scones, which has three types of chocolates added, chocolate powder, chocolate chips and chopped dark chocolate for topping. In my new oven I could...

Fish Cutlets

Christmas season is incomplete without cutlets for a Malayali :) And for me fish cutlets, especially because of having a fish lover at home, my 9 year old boy. Gauthu likes all snacks made of fish, like fish cutlets, fish fingers, fish steaks and baked fish with chips, but not a big fan of traditional curry and fried ones.  I made a big batch of fish fries the other day and he did not appreciate it much. So whenever I am home, I used to make one of the fish dishes he prefers. This time because its Christmas season, I had a couple of such varieties in my kitchen. The fish I got this time was a freshwater one with soft flesh. All you have to take care is to buy fleshy fishes, so it would be easy to remove the thorns. Fish cutlet is such an easy snack, which can be made from a few ingredients, which are readily available at any home. You cannot go wrong with this recipe, and yes, if you are looking for an evening with admiration from your guests, this would be the right way to go ?...
