Chicken Kebabs - Chicken Patties

I have made kebabs in many different ways before, using chicken or potatoes, and Kebabs is a loved snack at home. It is an easy dish but a perfect tea time snack and so filling that you don't have to plan a dinner separately on Kebab snacks days. But always one thing that makes me concerned about is the oil frying part of it. Kebabs should be cooked in enough oil to be dipped in it, so that it cooks evenly.
This time, there was some sausages left over in my refrigerator, some salami and one piece of boneless chicken, when I was searching for ingredients for the evening snack.  I want to finish this off as it can go stale if kept for long and my vacations were almost ending. First thing came to my mind is Kebabs or Patties, but dropped the thought thinking of the unhealthy cooking and I know my boys had a lot of oils and sweets all these days. 
I was thinking of an alternate snack, just when the idea of baking them has come to my mind. What if I can bake the patties in my oven for a healthier version, and the ingredients are very much healthy. I can have a protein packed snack. As a disclaimer I would say, the processed meat is never healthy, so try to reduce the consumption.
So I grabbed whatever was available in the refrigerator for the patties and started my experimentation of baked Kebabs. It was my first time baking them, so was little concerned about the cooking time and the whether the Kebabs would be done from inside. I would say, it was really awesome, better than the fried ones, and my boys loved it to the core.

I felt so satisfied, being a guilt free mom and wife by feeding them something which has less oils. Of course the whole thing can be made healthy by just using the boneless chicken. It was because I had those processed stuffs readily available at home and went using that.

Here it goes the recipe.

Ingredients:
Chicken sausage - 20 nos
Chicken boneless - 1 big breast piece
Chicken salami - 10 pieces
Butter - 1 tbsp
Green chillies chopped finely- 1 tbsp
Coriander leaves chopped - 1 tbsp
Cinnamon, nutmeg powder - 1 tsp
Chilly powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Salt to taste
Olive oil to wash

Method:
Grind all ingredients together except butter , green chillies and coriander leaves.
Mix butter, green chillies and coriander leaves to the chicken mix. Take lemon sized balls and shape it into a patty. Line a baking tray with parchment and arrange the patties. Drizzle with olive oil and bake each side flipping through after 20 minutes for each side , at 180 C in a preheated oven.





Note : You can have mushroom, paneer, potato patties as well the same way.

Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait.
