Fish Cutlets

Christmas season is incomplete without cutlets for a Malayali :) And for me fish cutlets, especially because of having a fish lover at home, my 9 year old boy. Gauthu likes all snacks made of fish, like fish cutlets, fish fingers, fish steaks and baked fish with chips, but not a big fan of traditional curry and fried ones.  I made a big batch of fish fries the other day and he did not appreciate it much. So whenever I am home, I used to make one of the fish dishes he prefers. This time because its Christmas season, I had a couple of such varieties in my kitchen.

The fish I got this time was a freshwater one with soft flesh. All you have to take care is to buy fleshy fishes, so it would be easy to remove the thorns. Fish cutlet is such an easy snack, which can be made from a few ingredients, which are readily available at any home. You cannot go wrong with this recipe, and yes, if you are looking for an evening with admiration from your guests, this would be the right way to go 😊Accompany with ketchup and onion rings, and what else needed with a hot piping tea!

Over to the recipe now. The below one makes 30 medium sized cutlets.

Ingredients :

Filling

Minced cooked chicken
Fish , thorns removed - 2 cup (boiled with 1/2 cup water until cooked)
Boiled mashed potatoes - 1 cup
Green chilly, chopped - 2 nos
Coriander leaves chopped - 1 tbsp
Curry leaves chopped - 1 tbsp
Garam Masala - 1 tsp
Salt to taste

Coating

Eggs , whisked - 2 nos
Breadcrumbs, of 8 brown breads

Oil for frying (avoid strong flavored ones like coconut oil)

Method:

Carefully remove the thorns from fish and mash it. Add mashed potato to this and mix well. Add green chilly, coriander and curry leaves, masala and salt and mix well.

Take lemon sized balls from the mix and shape it like a patty.

In another bowl whisk the eggs and take the breadcrumbs in a plate.

Dip the patties in egg first and then breadcrumbs. You can keep this in refrigerator for 30 mins, so that the patties becomes firm.

Heat oil on high and reduce the heat to medium. Dip the patties and fry in medium heat till golden brown.


Serve with ketchup and onion rings.

Note : The same can be used for making chicken cutlets by just replacing cooked minced fish with chicken.

There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait.
