Homemade Pineapple Wine

It was on my way back from my Business Trip to my homeland I realized that Christmas is almost reaching in a month and what about the wine for my Christmas spread. The grape wine I prepared 2 years back was almost over. So it is time to replenish my wine reserve.
This time I wanted a different flavor, as grape wine has become so common and boring. So my mind started roaming around to figure out the best wine I could even make. Finally I have seen pineapples smiling at me in my mind and right away, I took my phone to make the request to my hubby darling to get me 5 pineapples, a new bucket and other accessories. This time I put it in a high quality plastic bucket, as the earthen pot way was a bit messy.
I was a little skeptical the entire process, also because I am gonna leave her alone in 2 days here and would be back during Christmas only, when I will get to see how she turned out. But I didn't let my hope go, and went on with that idea.

My achan got another responsibility now, to check her everyday and whisk once in a day. And I used to ask about her when I make a call to my parents :D 

And the day has reached finally after a long wait, on 24th morning when I landed, she was the only one in my mind. I ran to the store room where she was kept and opened it and saw the frothy liquid and the liquor smell. Ohh! what a wonderful feeling.
Then started the filtering process which could not have been completed without my hubby's help. As it's so tiring process and I lost my energy midway. But as always, all that efforts paid off well and the first glass to the person behind the hard work. It was truly tasty and I loved it to the core. My new version of yellow wine is ready !


Ingredients:
Pineapple, chopped - 5 to 6 numbers
Water, boiled and cooled to room temperature - 7 liters
Sugar - 3.5 kg
Cinnamon sticks - 4 big sticks
Yeast - 3 tbsp
Wheat germ- 1/2 cup

Method:
Clean the bucket with hot water and pat dry. Put the pineapple pieces, yeast and wheat germ and mash it well with hands. Now add water and sugar and mix. Add cinnamon and close the lid. Now wrap it with a cloth, so that it is air tight.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them.
