Chocolate scones - Christmas tree scones

I was very much looking forward to bake this one and was in my pending list for long time. I got mesmerized to it while watching Gemma's bigger bolder baking channel in YouTube. She was presenting making of Irish scones and the way she explained was so easy to comprehend and found it an interesting recipe with minimal items and effort.

So I decided that scones should be part of my Christmas bakes and surprisingly this scones took it's place as the first baking I did in my new oven.

But the chocolate scones is inspired from home cooking adventure you tube channel with some variations, coz I wanted a Christmas tree look for them and a melt in mouth chocolatey effect. Also the ingredients , as I m a chocolate lover, I made sure that every type of chocolate available should be in.
The name says it all, triple chocolate scones, which has three types of chocolates added, chocolate powder, chocolate chips and chopped dark chocolate for topping. In my new oven I could see how the baking goes and I enjoyed the steps.

Over to the recipe now.

Ingredients:
All purpose flour - 1 1/2 cup
Butter cold, cut into cubes - 3/4 cup
Brown sugar - 1/2 cup
White sugar - 1/4 cup
Cocoa powder - 1/2 cup
Baking powder - 1 tsp
Salt - 1/4 tsp
Buttermilk - 1/4 cup
Eggs - 1 nos
Chopped dark chocolate - 1/4 cup
Dark chocolate chips - 1/2 cup

To brush before baking

Eggs, beaten - 1 nos
Chocolate chips and chopped chocolates - 1/4 cup

Topping

Confectioneries sugar - 1 cup
Milk - 3 to 4 tbsp
Tutti fruitti - green and red

Right from the Oven

Christmas attire :)

Method:

Sift together dry ingredients, including sugar in a bowl and  cut in the cold butter pieces until the flour forms pea sized lumps. Mix egg and buttermilk together and pour it to the flour mix. Roughly mix to form dough. Do not overmix. Yes in bold, because the rough mix dough is best for scones. Fold in chocolate chips and chopped chocolates. Roll it to a 0.75 cm thickness disk and cut into triangles. You can even cut into round shapes. Apply egg wash and top with more chocolate chips before baking. Bake in preheated oven at 180 C for 20 to 25 minutes.
Cool in a wire rack and serve.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. So my experience with pollichathu was with Karimeen alone until this time, my favorite fish, which is called Pearl spot in English. All these while I haven't tried any other fish for this recipe. So let me tell you the story of how Ayala came into picture :D This happened on one fine day, my mom in law was telling me that the women who brings fish has brought lots of Mackerel and many other fishes and convinced her to buy a lot of them. So she was in a confusion on what will we do with all these, as weekend was almost going to finish and everyone of us moving to different places. And the same curry or fry would be boring and won't be appreciated by the men's league at home :D Then I went for helping her with the fish dilemma, she was having and...

Egg biryani

Biriyani - The most rated and loved dish in India. Be it north or south, biriyani fan club chain is impossible to break. Now I am going to expose one secret about me and Biriyani. I know once I reveal, there would be a lot of haters for me, but this is just my personal opinion and I am all in support for all its supporters. So the thing is growing up, the name of biriyani was like a hype which hit me, and I remember craving for biriyani back then. I used to think, oh man; who discovered this wonderful dish. But lately, I think I lost the love for biriyani, not only biriyani but sort of all Arabic food. I am not a big fan of arabic cuisine, even though the foodie in me can eat any food and respect and appreciate every cuisine; for some reason the ingredients of Arabic cuisine is not going well with my taste palette as well as tummy. But I m a big supporter of food lovers, and having the core fans of Arabic food at home, I have to prepare, but I love preparing as well. Coz for me what...

Grilled Chicken in Quinoa Tortilla wrap

Healthy meal preparation is so satisfying, as we know we are feeding our loved ones with clean food. When I say clean food it does mean, non processed, with balanced nutrients, and not in expense of the taste. These healthy tortilla wraps are so yummy that you will not even imagine it has so many hidden good stuffs in it. I am like my mom, she is too smart to hide the good stuffs in whatever she prepares and we will not even know what we just ate had something which we hate if given in its form. Now I have acquired that smartness too and just few days back I prepared an Avocado Mango smoothie for one of my colleague and she told, "I hate Avocados! My mom would be surprised if she comes to know that I had Avocado. But how yummy your smoothie is ! " I was glad that I could make someone eat a healthy thing which they hated ever, and my hiding skills worked out.  The same lady was fooled by my papaya halwa, she is a papaya hater too :P Fooling people is good som...
