Red Rice poha - the perfect Indian breakfast!


So Sunday morning started with a healthy breakfast. As per dietician Rujitha Diwekar, you should eat  what your grama cooked. Poha of course is not what my Grama cooked, but some other Gramas in India would have for sure. Mind is desi today in first half, yes intentionally mentioned as second half would be out soon and you would know it travelled from India to America in no time :P 
Today's craving is for North Indian breakfasts and Masala chai of south, especially Elachi in chai is Kerala special. Of course the Mallu blood needs something south always!

As you guys know, Red rice is packed with lot of nutrients. Growing up I did not even know Rice can be white and polished. What I knew was the Red bran coated fatty rice and tasted so awesome. Teenage has taken to another phase of exploring new foods and brought home the basmati. My Dad looked at it like an Alien entered his house. The first impression wasn't that well, and he started treating Basmati like my teenage boyfriend!

Cooked it in many ways, but couldn't satiate his strong Red rice love. My boyfriend was out soon from home, and red rice was again back. I cursed myself being a Mallu. Then post marriage the strong interest towards fitness industry has opened my eyes that no other rice is better than Red rice, "The evertime member of my home". That day I realised, parents have the best hunch about their kids; your white rice boyfriend wasn't trustworthy, lol :P

No offence to basmati though, I still love him the way I used to in beginning. But love for red rice became intact. He is the real member of family. 
So saw this guy again in Bigbasket in poha form, and yeah perfect time to marry south and north has come :D 

A Malayali version POHA!


Ingredients:

Veggies chopped - anything or everything as you like. Below pic speaks that loud :P
Half cup red rice poha
Ghee - 2 tsp
Coriander leaves chopped
Peanuts - a handful
Split gram - 2 tsp
Sweet potato - boiled (4-5 pieces) 
Lemon juice - 2 tsp
Chaat Masala - 1/2 tsp
Turmeric powder - 1/4 tsp


Method:

Add ghee in a kadai, add split grams, chopped onions, ginger, garlic chopped and cook for a while. 
Then add other veggies one by one based on their cooking time. I added beans first, then carrots, green peas tomatoes and finally capsicum.
Boiled sweet potatoes and roasted peanuts was added finally.

Rinsed poha in strainer and kept aside. 
When veggies are done, add poha and the masalas, lemon juice to end with. Healthy yummy poha is ready to serve!


Side note:

I have seen potatoes fried and added in some special poha, but today I wanted to stay away from simple carbs or I would say I wanted some wholesome carbs. So I used sweet potato here, again full of nutrients. I didn't fry it, being health conscious a bit during that time.

Sweet potato noodle soup authentic Japanese way

The dish that made me feel so proud about myself. Sweet potato noodle soup prepared in authentic Japanese way, from the scratch. I really felt like a 5 ⭐️ chef 👩‍🍳 today . Such a comforting food for a gloomy cold day. I prepared a veggie stock, some of my favourite veggies blanched and fish as topping.
