Prawns tangy stir fry

We are fish eaters, or better way to say is core non vegetarians.
Prawns are one among our loved sea foods, I think most of the fish lovers are obsessed with this, and I have seen even vegetarians who starts with fish tries Prawns as their first experience.

This is a tangy stir fry with Onions, Green bell peppers and tomatoes.

Ingredients:

Prawns, de-shelled, deveined and cleaned - 1 cup
Green bell peppers sliced - 1/2 cup
Onion sliced - 1/2 cup
Cumin seeds - 1 tsp
Spring onions chopped - 1 tbsp
Green chillies, slit - 2
Tomatoes pureed - 1/4 cup
Tomatoes chopped - 1 small
Lemon juice - 1 tbsp
Garlic chopped - 1 tbsp
Ginger Sliced - 1 inch
Tomato Ketchup- 1 tbsp
Soy sauce - 2 tsp
Oil for sautéing (I used coconut oil)

Masalas
Chilly powder - 1 tsp
Turmeric powder - 1/4 tsp
Garam Masala - 1/4 tsp
Salt to taste

Method:

In a pan pour coconut oil and sputter the cumin seeds. Add garlic and ginger and sauce for a minute. Add onions, green chillies and sauce till translucent, do not over cook. Now add bell peppers and sauce for 1 to 2 minutes. Add masalas and mix well, cook until masalas raw smell is gone. Add prawns, tomatoes and cook until done. Prawns should not be over cooked, so no need to add water. The water from prawns is enough to cook it through. Once half cooked add tomato paste and tomato ketchup, soy sauce and cook till done. Add lemon juice and mix well. Serve hot.

I served it with home made Dosa. Side it up with Raw veggies and hummus. A smoothie for final touch up :)

This can be paired with Appam, Puttu, Oratti or even boiled rice. This goes well with all of those.

Grilled Chicken in Quinoa Tortilla wrap

Healthy meal preparation is so satisfying, as we know we are feeding our loved ones with clean food. When I say clean food it does mean, non processed, with balanced nutrients, and not in expense of the taste. These healthy tortilla wraps are so yummy that you will not even imagine it has so many hidden good stuffs in it. I am like my mom, she is too smart to hide the good stuffs in whatever she prepares and we will not even know what we just ate had something which we hate if given in its form. Now I have acquired that smartness too and just few days back I prepared an Avocado Mango smoothie for one of my colleague and she told, "I hate Avocados! My mom would be surprised if she comes to know that I had Avocado. But how yummy your smoothie is ! " I was glad that I could make someone eat a healthy thing which they hated ever, and my hiding skills worked out.  The same lady was fooled by my papaya halwa, she is a papaya hater too :P Fooling people is good som...

Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this. Yes, that is nothing but, our own freshly grated coconut :P Bionico is on sweeter side when compared to Parfait because of its sweetner condensed milk. I had my jars saved from Frozen bottle ice cream cakes, and that helped me to give my Bionico that ramp ready look. After the layers were set up, I was going crazy with the photos, as the beauty was looking so pr...

Soya halwa

Soya halwa or Soyabean halwa, the name itself sounds so healthy and of course whoever would like to have a healthy version of halwa can give a try to this great dessert. I came across this guy very accidently, and if you guys remember my earlier post on Soya milk, this is where the secret talked about in that post getting uncovered. So anyone have any hunch? Ok let me reveal the truth. It was when I was about to throw away the remains of soya milk preparation, I noticed that what I am going to throw away isn't a waste, but having as much as nutrients in soya bean. What if I can preserve it for something, or is there any way I can make a recipe out of it. If you see recently I am doing lots of research on North Indian halwas. So when I say North Indian , it is very much different from Kerala style. What I feel is North Indian halwas are easy to make and doesn't have to be so much conscious about the 2 thread consistency and all, which we have to be very much careful in...
