Multigrain healthy waffles


My love for English breakfasts made me splurge on my brand new Prestige waffle maker. I love to eat clean mostly, and in between indulge in junks. So most of my meals I prepare myself. 
I am a waffle lover and the ones we get around is made from Maida or all purpose flour which is the waste of wheat germ, yes guys for those who doesn't know; what ever comes as "refined", be cautious.

Refined is such a purest term which is real sin in food industry. Refined oil, refined flours, get away from it as much as possible.
Also if you can grind and make the flour of any grain at home, it is really not a rocket science. It is so easy to make most of them, and you don't have to worry about those allergen information in flour cartons, "Contains nuts; made in same processor as nuts" 🥜 

So the waffle love and my new waffle maker was calling out for a waffle break fast on a beautiful Sunday. This is the healthiest waffle you can ever get per me, completely vegan with no eggs and no added sugar too. If anyone wants to challenge this recipe, I will accept that :P lol

So over to the recipe now.


Ingredients (serves 2 people) : 

Banana mashed - 1/2 of one Robusta 🍌 
Ragi flour - 2 tbsp
Oats flour - 2 tbsp
Barley flour - 1 tbsp
Jowar flour - 1 tbsp
Maize flour - 1 tbsp
Flax egg - ground flax seed soaked in water (This is a perfect replacement for egg)
Seeds and nuts trial mix (home made) - 1 - 2 tsp
Salt as required
Eno fruit salt (optional) - 1/2 a sachet
Baking powder - 1/2 tsp
Cinnamon powder - 1/2 tsp
Water to make a thick bater

I added some chocolate chips for that chocolaty touch. You can add any berries or fruits of your choice.
Method:
Mash the bananas into fine paste with back of fork or spoon. I always have banana in my freezer as I like to add that as sweetener for many of my sweet dishes and avoiding added sugars.
Now add all the flours, cinnamon, salt and baking soda to the banana mix and then the flax eggs too.
Mix well and add water to make the batter similar to below image.
I added Eno fruit salt just before cooking the waffles, but it is purely optional. You can add 1/2 tsp baking soda as well as replacement or just leave as is.
I served it with maple syrup drizzle, peanut butter and fresh pear 🍐 and the accompanying drink was my Keto Coffee! Keto coffee cuts down the sweetness of waffles and is perfect for getting those healthy fats.







Side notes:

Trial mix is so easy to make at home; just combine dry fruits, seeds and nuts and thats it. Store brought can have preservatives and also very heavy on pocket.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them.
