Masala chai ☕️

What comes into your mind when you hear this? Masala Chai?
For me Chai itself gives that Indian feel, especially when foreign chefs use the term Chai latte, oh, the patriotism is evoked and goosebumps of the pride of Indian Chai.

This chai is my favourite combination. The ingredients can strike a scepticism in your mind, but trust me, It is just wow!
A rainy day or a cold whether or simply boring mood when you have some savoury snacks to munch on this chai is the best companion.

This is my go to drink with my Indian breakfasts and as an evening snack time drink. Try this out, you won't be let down for sure.
Ingredients (for one serving):

Chai patta or Tea leaves - 1 tsp , chai powder will also do
Ginger freshly grated (preferably) or ginger powder - 1/4 tsp
Elachi or Cardamom powder - 1/4 tsp
Pepper powder - 1 big pinch , yes don't doubt this :)
Hot Milk - 1/2 cup or Milk powder - 1 tbsp
Jaggery (palm, sugarcane or coconut) - 1 tbsp
Water - 3/4 cup

Method:

Boil water with all masalas. In a tea mug pour the milk (or milk powder) and add jaggery. Mix them well. Now strain the boiling tea to this. Mix with a spoon. Thats it. Your Chai is just ready.

Side notes:

I like my chai to be very strong and also very sweet. So you can adjust based on your likings.
Serve always hot.
I use Amul slim trim milk powder, as I don't stock animal milk in my fridge anymore. I mostly use plant based milks, like oat milk, soy or nut milks. But this chai needs the real milk taste, and hence using powder.

Grilled Chicken in Quinoa Tortilla wrap

Healthy meal preparation is so satisfying, as we know we are feeding our loved ones with clean food. When I say clean food it does mean, non processed, with balanced nutrients, and not in expense of the taste. These healthy tortilla wraps are so yummy that you will not even imagine it has so many hidden good stuffs in it. I am like my mom, she is too smart to hide the good stuffs in whatever she prepares and we will not even know what we just ate had something which we hate if given in its form. Now I have acquired that smartness too and just few days back I prepared an Avocado Mango smoothie for one of my colleague and she told, "I hate Avocados! My mom would be surprised if she comes to know that I had Avocado. But how yummy your smoothie is ! " I was glad that I could make someone eat a healthy thing which they hated ever, and my hiding skills worked out.  The same lady was fooled by my papaya halwa, she is a papaya hater too :P Fooling people is good som...

Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this. Yes, that is nothing but, our own freshly grated coconut :P Bionico is on sweeter side when compared to Parfait because of its sweetner condensed milk. I had my jars saved from Frozen bottle ice cream cakes, and that helped me to give my Bionico that ramp ready look. After the layers were set up, I was going crazy with the photos, as the beauty was looking so pr...

Soya halwa

Soya halwa or Soyabean halwa, the name itself sounds so healthy and of course whoever would like to have a healthy version of halwa can give a try to this great dessert. I came across this guy very accidently, and if you guys remember my earlier post on Soya milk, this is where the secret talked about in that post getting uncovered. So anyone have any hunch? Ok let me reveal the truth. It was when I was about to throw away the remains of soya milk preparation, I noticed that what I am going to throw away isn't a waste, but having as much as nutrients in soya bean. What if I can preserve it for something, or is there any way I can make a recipe out of it. If you see recently I am doing lots of research on North Indian halwas. So when I say North Indian , it is very much different from Kerala style. What I feel is North Indian halwas are easy to make and doesn't have to be so much conscious about the 2 thread consistency and all, which we have to be very much careful in...
