Fish steak with roasted veggies and sweet potatoes

Another great dinner plan can be made with this awesome combi, and especially for fish lovers, this would be an eternity to dive in.




You know being a Mallu, how much I am obsessed with seafood. I think my parents would have fed me more fish as a baby than baby formulae like Cerelac and all :D

Jokes apart, I think it is in our blood; the love for fish and of course the passion for food as a whole.
This dish as you can see aligns with the classic way of putting together a steak plate. Protein steak as one portion roasted veggies as other portion and for the carbs, I went with sweet potato. 

Sweet potatoes are one of the go-to options for carbs, as you can have it without guilt compared to other carb options. Also, the nutrients coming along its way are boundless. My passion for food, never stops me trying out everything edible around when I say edible this is completely a perception of a person too. Say, dog meat for me is nonedible. The way each one is brought up matters.

Anyways, coming back to our star of this post; The fish steaks! I used soft white flesh fish as it cooks so easily and very tasty too. You can go with any fish with fewer thorns and thick flesh, as steaks demand a fleshy protein chunk as a pre-requisite :)

Ingredients:

Steak

Fish fillets - any thick fleshed one (500 gm)
Yogurt plain - 2 tbsp
Carom seeds - 1/2 tsp
Salt as required
Paprika powder - 2 tsp
Turmeric powder - 1/2 tsp
Lemon juice - 2 tsp
Gram flour - 2 tsp
Ginger/Garlic paste - 2 tsp
Spring onions chopped - 1 sprig
Garlic roughly chopped - 4 to 5
Green chilies, split - 3 nos
Coconut oil - 2 tsp

Sweet potato roast

Sweet potato diced and boiled - 2 cups
Coconut oil - 1 tsp
Cumin seeds - 1/2 tsp
Minced Garlic - 10 pods
Minced green onions - 2 sprigs 
Italian seasoning mix - 1 tsp ( oregano, dill, basil)
Garlic powder - 1/2 tsp
Ginger powder - 1/4 tsp
Red onion powder - 1 tsp
Split green chilies - 2 nos

Roasted Veggies

Any veggies of your choice. I used broccoli, french beans, carrots, cauliflower, onion.
Smeared it with little coconut oil, salt, and pepper and baked in the oven for 15 mins.

Dip

Yogurt - 1 cup
Cumin powder - 1 tsp
Dill leaves chopped - 2 tsp
Salt to taste
Honey - 1 tbsp
Flax seeds, chopped green chilies, and pomegranate seeds to drizzle on top


Method:

Mix all ingredients for the steak except fish, until we get a smooth batter-like consistency. Now add the fish fillet to it and coat the peices well in the batter. Keep it for the marination at least for 1 hour.

Now we have 2 ways to prepare it. You can either pan toast it or cook in the oven. Pan toast it till both sides are golden and cooked well. In the oven, cook each side for 10 mins each, at 180 C. make sure you preheat the oven before placing the fish.

For the sweet potato, cook the potatoes in water with a little salt and run fresh cold water to avoid overcooking.

Now mix it with the rest of the ingredients and cook in a pan or in the oven the same way as in fish. As potatoes are cooked, we just need to cook for 5 to 7 minutes.

Roast the veggies, mixed with ingredients in the oven for approx, 15 minutes. By that time veggies would be cooked and crisp.

For the dip, mix all ingredients together with other than topping. Keep it in refrigeration until use. Add toppings at the time of serving.

Arrange your steak platter and enjoy :)
