This was one of the Easter where I was away from home. My usual Easter as you guys know, comes with an extensive lunch spread. This time it was unusual as I was in my rented home at Bangalore, wondering how I am going to celebrate Easter alone.
Finally I figured out to make it special by preparing Gnocchi, and as it was Sunday when I cook for Monday tiffin for my friends, I thought I will pack Gnocchi for their Monday lunch. It turned out tasty and my buddies liked it. What else to ask, than a happy tummy of my people :)
Homemade Gnocchi
Semolina - 1/4 cup
Maida - 1 cup
Mashed potato 🥔- 3 nos
Salt to taste
Olive Oil - 1 tbsp
Drizzle of water if needed (usually potato's moisture is enough for forming the dough)
Base veggies
Oil for sautéing
Spinach chopped - 1/2 cup
Garlic chopped - 10 nos
Cherry tomatoes - 6 nos
Salt - 1/4 tsp
Sauce
Oil - 2 tsp
Butter - 1 tbsp
Salt - 1/2 tsp
All Purpose flour - 2 tbsp
Water - 1/2 cup
Milk - 1/4 tsp (you can use cream as well if you need a thick creamy texture)
Pepper powder - 1/4 tsp
Onion powder - 1 tsp
Garlic powder - 1 tsp
Nutmeg powder - 1/2 tsp
Chili flakes - 1/2 tsp
Cheese grated - 1/4 cup
Method:
Mash the potatoes into fine paste. Now add potato to the flour and semolina and add all other ingredients in it. Knead into a dough and roll into long cylinder shapes. Now cut 2 inch long pieces from it. Using a fork, press each piece and roll to one side. This is to form the conventional stripes design on gnocchi. Heat water in a big pan with oil and salt. Once water comes to a rolling boil, add the prepared gnocchi pieces one by one and cook till the pieces comes on top. This shows that gnocchi is cooked well. Remove from water and add to the sauce directly.
In a pan prepare spinach garlic gravy, by adding some oil and salt. We need to just wilt the spinach and cherry tomatoes.
In another pan make the White sauce. Pour oil, butter and melt it. Add all purpose flour and cook till it is golden. Now add water and milk together (or cream for milk). Stir continuously so that there is no lump. Add the powders and then the sauteed spinach garlic mix. Now add the cooked gnocchi directly from its water. This will ensure the flavor of mashed potatoes are retained. Add grated cheese and serve hot.
