Prawns đŸ€ salad with brown rice


All Salad lovers out there; if you want to put together a very simple salad which has the goodness of all that macros, this is the one to go for. This is highly protein packed because of the prawns addition,
and my addiction to Prawns helps me to have protein this way easily :P Oh my philosophy is going overboard sometimes right :P

Ok then, not going to much into philosophy and making you bored, coz I dont want you guys to stop reading this post now and miss such an awesome lunch or dinner idea, which is healthy wholesome, lovely...oh no again ;)






Ingredients:

Brown rice cooked

Prawns  salad :

Prawns cleaned and deveined- 200 gms 
Chilly powder - 1 tsp
Pink salt to taste 
Onion powder 1 tsp 
Garlic powder 1 tsp
Pepper powder 1/2 tsp
Garlic chopped 2 tbsp
Ginger chopped 1 tbsp
Beans cut lengthwise 1 cup
Green peas -1/4cup
Egg plant diced - 1/4 cup
Cherry tomatoes  đŸ’ 7 to 8
Basil 🌿

Method:

Pour a little coconut oil or any cooking oil of your choice.
Add garlic , ginger and cook for 1 min. Now add veggies one by one, beans, egg plant , peas and cook for 2 to 3 mins. Now add marinated prawns đŸ€. Cook for 3 0r 4 minutes. Be careful not to over cook. Check for salt . Add the cherry tomato 🍅 and chopped basil.

Cook for another minute. Serve with brown rice 🍚



Arrange brown rice and salad side to side. I used my home made tahini as spread for the salad.
What I did is took 1 tbsp Tahini and diluted it with 2 tsp lemon juice and 1 tbsp water to form a flowy consistency for the spread. Now just dive into the divinity :)

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them.
