Homemade Granola !

Now a days I feel like every post I start with saying this is my obsession. Apparently I think food is my obsession, irrespective of whatever cuisine it is 😁

So another obsession GRANOLA 😍😍😍😍
I remember my US days where I was making granola for breakfast every morning for my office buddies and myself. Because I love them so much I think I have a great knack on combinations granola can have. The one I used to make at US was richer version with flavored milk, flavored yogurt, lots of cranberries, raisins and walnuts and to perfection it out some cinnamon powder. One of them used to say, Swathy is making Panchamritham for us. lol. For everyone’s knowledge, Panchamritham is a sweet dish made usually in temples as offering to god. 

So this time I was visiting my husband at Thrissur at his office place, which is not a usual visit, as you know my visits are to Trivandrum where my core roots lie. I saw the unhealthy meals he is having everyday staying alone. The wife in me was feeling so bad and guilty about how irresponsible I can be. It’s my responsibility to make my husband eat healthy food, and I am all roaming around doing nothing for him? That triggered the making of this big batch of granola and packing for him so that at least breakfast he can have at home and a healthy option.

I packed it in 2 big boxes, one for me too 😝 As you know Granola knows how much I love her 😍
On my hubby’s box I kept a note to make up for my irresponsibility and to bring that cute smile with dimples on his chubby cheeks out ☺️☺️



So over to recipe. Easy one but have to be careful in timing and lot of ingredients goes here as it is a wholesome food, or may be it’s my version 😝


Ingredients: (since I bought everything in kgs I am including that standard here)

Rolled oats - 1 kg
Pumpkin seeds - 200 gm
Roasted peanuts - 200 gm.
Sunflower seeds - 200 gm
Melon seeds- 200 gm
Cranberries - 300 gm
Black raisins - 100 gm
Green raisins - 100 gm
Sesame seeds - 50 gm
Crushed almonds - 250 gm
Chopped walnuts - 200 gm

Syrup: 

Jaggery - 250 gm
Water - 1/2 to 3/4 cup ( add water to form a thick jaggery syrup)

Method:


Dry roast all ingredients separately in a heavy bottomed pan. Mix all together.

In another pan mix jaggery and water and bring to a boil until jaggery dissolves. Cook till it thickens a bit, just until frothy. Pour this jaggery syrup to roasted ingredients and mix well until combined. Allow it to completely cool, and then pack in air tight containers.

Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this. Soya halwa

Soya halwa or Soyabean halwa, the name itself sounds so healthy and of course whoever would like to have a healthy version of halwa can give a try to this great dessert. I came across this guy very accidently, and if you guys remember my earlier post on Soya milk, this is where the secret talked about in that post getting uncovered. So anyone have any hunch?
