Dry fruit burfi


Again another healthy sweet of this Diwali.
Dry fruit burfi. I was so glad to see it coming out just like store brought one, but taste much better, because I used a lot of exotic dry fruits and nuts to make it an ultimate one.


You can see from recipe, that there is no sweetness added too. So what more healthy than this sweet right :)
Try it out and enjoy. This is the best way to make sure your kids who doesn't like dry fruits and nuts will get all the goodness and they will enjoy this to core.
Ingredients:

Dates - 2 cups
Prunes - 1 cup
Figs - 1/2 cup
Raisins (white and black) - 1/4 cup
Nuts - Cashews, Pistachios, Peanuts, Almonds (1/2 cup each. Peanuts 1/4 cups)
Ghee - 1/2 cup
Cardamom powder - 1 tsp
Khus Khus or poppy seeds - 1/4 cup

Method:

Roast poppy seeds and keep it aside. 
Now blend the dates, prunes, figs and raisins in a mixer into coarse paste. 
Chop all nuts and ghee roast it for few minutes. Make sure it doesn't get overcooked.
Now add ghee and cook dates mix until its mushy. Add all nuts,cardamom powder to it and 2 spoon of poppy seeds now. Take out the mix in a parchment paper and when hot itself shape into into a log. In a parchment, put the rest of roasted poppy seeds.  Move the log over poppy seeds so that it covers the log fully. Wrap it up in parchment and then with a cling film and refrigerate overnight. 

Next day take out and let it sit for 30 minutes. Then cut the log into rounds, 1/4 inch thickness.

Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. Soya halwa

Soya halwa or Soyabean halwa, the name itself sounds so healthy and of course whoever would like to have a healthy version of halwa can give a try to this great dessert. I came across this guy very accidently, and if you guys remember my earlier post on Soya milk, this is where the secret talked about in that post getting uncovered. So anyone have any hunch?
