Chicken pot pie

This time christmas was light for us, as I was just back from a 1 month world roaming and was very tired. But Christmas has to be celebrated as well, and I figured out lazy cozy dishes which looks really gorgeous but easy to put together.




One among our Christmas lunch spread was this cute, lovely chicken pot pie. I remember my Hubby asking me last year, "Do you know how to make Chicken pie? " and Swathy doesn't have a no for anything, Of course darling. Chicken Pot pie is here for you :)

The passionate cook in me took that as a challenge and when I was planning Christmas 2018 spread this came to my mind, coz I knew it is easy to put together, as I have experience in berry and chocolate pie making and also a one pot dish which looks complicated and elite. I made a simple design as well, which looks like rose buds on top of pie dome, with a cross to get the heat inside to flow. When it came out of oven it resembled a Christmas wreath though. Coincidence, isn't it :)



Ingredients:

For pie crust (eggless)

All Purpose flour - 1 cup
Butter, chilled cut into cubes - 1/2 cup
Salt - 1 tsp
Chilled water - to make a tough dough

Filling

Veggies cut into cubes - carrots, beans, green peas, spring onions, celery, potato) - 1 cup
Chicken baked and cut into cubes - 1/2 cup
All purpose flour- 2 tbsp
Salt to taste
Milk - 1/2 cup
Butter - 1 tbsp
Pizza seasoning - 2 tsp
Pepper - 1/2 tsp
Grated cheese - 1/2 cup

Egg wash to baste over the pie crust.



Method:

In a bowl mix flour, salt and butter. Mix until flour becomes crumbly. Now add water and roll to a tough dough. No need to knead well. Wrap with a cling film and refrigerate for atleast 30 mins or overnight.

For filling, heat a pan and put butter to melt. Sauté the veggies until half cooked. Add the spices and powders and mix. Add all purpose flour and mix well with veggies. Now add milk and cook till everything is incorporated well. Now add chicken cubes and mix. Keep aside to cool.


Roll the dough into 2 thick sheets. Arrange one sheet in pie dish and refrigerate the pie dish and other sheet in refrigerator until use. When it is time to bake take the pie dish out and bake in preheated oven at 200 C for 20 mins or until crust is light golden and crumbly. Cool crust and add the filling prepared before. Top with greater cheese and cover with second sheet. Cut excess and decorate as you wish. Now egg wash the top layer and bake in preheated oven at 200 C for first 10 mins , then reduce to 180 C and bake for another 20 mins. In between you can egg wash once again for a Golden  brown texture.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this.
