You know the authentic pesto calls out for Basil, pine nuts and all, but the one I made I wouldn't say is authentic because of change in ingredients :)
Hence calling it Basil Pesto my style!

So what is different from authentic pesto? Basil is there, but where in this Bangalore I will get pine nuts from. It might be available around, but wasn't lucky enough to find it yet anywhere I have been.
So this pesto replaced the pine nuts with my ever time nuts obsession PEANUTS!!!
People used to make fun of this poor thing, by saying we get salary in PEANUTS. Such a torture, right? What a shame to such a good food, nature has given. I love them more than any other nuts I guess, in any forms I would say. Peanut butter, roasted, raw, soaked, tempered, boiled, spicy ; oh no what a multitalented being it is. I know every nut is, but this is the nuts for common man too, with not so flashy price tags.
So enough about Peanuts now, I don't know I role played to be the savior of Peanuts here, have some underlying sympathy for it. Like Feminism, Peanutism :P
Ingredients:
Fresh Basil leaves - 1 bunch, chopped to get 2 cups
Peanuts - 1/2 cups
Ginger root - 1 inch piece
Garlic pods - 10 nos
Pink Himalayan salt as required
Olive oil - 1 tbsp
Juice of 1 lemon

Method:
Grind together all ingredients to form a smooth paste. Keep it refrigerated in an airtight container. It will last for 2 months.
