Banoffee French toast!!!


Where your mind runs when you hear banoffee? Okay if you couldn’t figure it out let me help you here; it is bananas and toffee ☺️


What another combination will compete with this right. So last week I had my friend visiting my Bangalore  house and since I was jet lagged from my 1 month world roaming I was trying to find a recipe so easy; but at the same time to make her feel special.

Yes she is my special love so she deserves something some pampering from me. I think I stole her heart by this simple perfect English breakfast, I would rather say French breakfast and the idea of adding “Banoffee “ touch made it an elite one.


And the final touch was made with a drizzle of chocolate syrup, of course my love for chocolate is famous by now.  One thing to quote about French toasts and all these international breakfasts; growing up my mom used to make most of them for us and I guess that made us inclined to them and they helped me as a roamer now enjoying the breakfasts from different parts of the world. I was the one among those lucky ones who was not nagging anyone about having problems to adjust with different cuisines, rather I enjoyed everything to the core. Okay then over to recipe now.

Ingredients (for one serving):

Bread, cut into half vertical sticks - 4 (I used multigrain bread)
Egg - 1
Milk - 2 tbsp
Sugar - 2 tbsp
Cinnamon powder- 1/4 tsp 
Salt a pinch 
Butter for toasting 

Topping :

Butter - 1 tsp
Sugar or jaggery - 3 tbsp
Milk - 1/4 cup
Salt - 1/2 tsp
Banana  - 1 sliced into rounds 
Chocolate syrup to drizzle on top

Method:

Mix egg , milk, cinnamon powder, sugar and salt together until well combined. 
Heat a pan and grease with butter. Reduce heat and dip bread sticks in egg mix and cook each side until browned.
In parallel prepare the caramel. Put sugar in pan with 1 tsp water, butter and cook without stirring until light brown. Start stirring until its golden. Now remove from heat and add milk and mix thoroughly until caramel dissolves in milk.  Cook again in low flame until thickened, add salt and bananas. Cook for 1 to 2 mins and then it is ready to use. 

Arrange French toasts in layers and top with the prepared Banoffee. Now drizzle chocolate syrup.


Notes:
In caramel fresh cream can be used to replace milk.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this.
