So yet another Monday snacky for my buddies at work. I was thinking what would I make this week as I was a little busy and did not do much of a grocery shopping. But my mind won't allow me to go empty handed in a Monday morning. More than they looking forward, I am always excited to make them taste my experiments :P
So opened the fridge and saw only 4 tomatoes and was wondering what snack I would make with tomatoes now. Shall I drop the plan. Then thought what about tomato halwa. What a weird thought right. I too felt. But didn't let it go, checked in Google and found there are lot of such weirdness around. Now I have the confidence, and there it stared the birth of my first ever tomato sweet dish.
Ingredients:

Sugar - 1 cup Maida - 3 tbsp
Milk - 1/2 cup
Ghee - 3/4 cup
Cardamom powder - 1 tsp
Raisins, almonds, pistachios, ground nuts for garnish
Method:
For blanching, dip the tomatoes in booking water for 5 mins to 10 mins. Now remove the skin. Grind into smooth paste. Ads little ghee and cook the tomatoes until the water evaporates. Mix maida in water and pour in tomato paste. Add milk , cardamom powder, sugar and mix. Add ghee little by little and keep on stirring, until it takes a lump form. Add dry fruits and nuts and move to a greases dish. Allow to cool in room temperature. Cut into peices if your choice and serve.
