Cherry Pie

Pie making is really a satisfying job, because of its easiness and final outcome so yummy and eye candy. I was always planning to make a fruity pie, my first one was a chocolate tart pie with peanut butter stuffed. So this one being a fruity pie, I wanted the real fresh fruits, but had to adjust with  canned real cherries, which was available in market. Season time I am planning to prepare with real ones again.


The result was really tempting and lovely that I am willing to bake pies even all around the year. My mobile cam and DSLR had a heavy duty that day, as I was not able to stop taking photos of this beauty. You can see that from this post itself :P  I posted the pic of this beauty with a caption, cherry pie my cutie pie. Seriously I fell in love at the her first sight itself :P


Ingredients:

Pie crust
All-purpose flour
Baking powder - 1 pinch
Butter
Salt
Egg
Water chilled to make dough

Stuffing  
Cherry pitted
Sugar
Corn flour

Topping
Egg wash
Granulated sugar

Method:
Mix dry ingredients and with hands rub in butter. Butter should be cut into cubes and chilled. Rub into the flour until it resembles bread crumb texture. Now add one egg and mix. Add chilled water 1 tbsp at a time, you can put ice cubes in water to keep it chill. Knead roughly into a tough dough. Cover with cling wrap and refrigerate for at least 30 mins.
Meanwhile prepare the filling. Take pitted cherries and ads granulated sugar. Wipe of any extra moisture before adding sugar. Now add cornflour and mix. Keep it aside.
Divide the dough into 2 equal parts and roll into 1/2 inch thick discs. In a pie tray line one rolled disc and press the edges for getting the pie shape. Bake this in preheated oven at 180 C for 15 to 20 mins or until crust turns a light brown shade. For baking use a weight on top of crust so that it won't bump. Take it out and cool a bit. Top with cherry layer. 

Then cover with other disc and shape it. Score the top layer so that heat pressure built up can escape. Now do egg wash and sprinkle granulated sugar. Bake in preheated oven for another 20 to 25 mins until the crust is crispy and golden brown.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this.
