Apple payasam

This was made for Gauthappan because this vacation I couldn't make anything for him and I wanted to do something to make him feel happy. The vacation was sort of stressful and Onam wasn't a celebration too. But being a mom, your heart won't allow you to stop caring about your lil one. Even though the mood was not festive, the lil one deserves some pampering, and to taste the "once in a few days privilege" he get as a son from his Mom.

Sometimes I feel like what a bad Mom I am, but my lil one used to pacify me saying, "Amma I know you are away from me for your work, and I know its for me you are trying" Sweetheart, I feel I don't deserve to be your mom, sometimes thinking about it; what an understanding matured baby I got. 





So going to the dish I prepared, apple payasam, and apple in payasam, sounds different right. But I can assure you, it would be finished in 5 mins, won't even allow it to get cooled ☺️



Ingredients
Apple chopped finely - 5 nos, I used with skin
Dates - 5 nos pitted
Water - 1 cup
Ghee - 1/2 cup
Brown sugar - 1 cup
Milk - 2 1/2 cups
Clove powder - 1 tsp
Cashews - 5 nos

Method
Cook apples and pitted dates in water until mushy. It should be mashed into paste. Now add ghee little by little and roast the apples in it. Add brown sugar and roast into an thick paste. Add milk and cook till thickens. Add clove powder and roasted cashews. Serve hot or cold.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this. Yes, that is nothing but, our own freshly grated coconut :P Bionico is on sweeter side when compared to Parfait because of its sweetner condensed milk.
