Tofu soup - Protein packed soup

For all those who wants to make sure of their daily protein intake is taken care without adding much fats, this soup is the best option. And if you see there is no cornstarch in this recipe, which makes it free from any carbs.

Tofu is the best source of protein as per many studies and it's vegan too, so this soup can be a good option for vegans, if you omit the egg whites ingredient. This is great for those who really look for a protein entry in their diet plan. Also you can see all the ingredients are very much available around and a very easy one to curb your hunger and keep you fit.
I would recommend taking this soup once in a week, especially people who works out and needs energy for their muscles. One fact about protein rich diet I would like to share is, how it helps reduce weight and keeps us slim. Protein helps grow muscles, and protein uses most of its calories in its own digestion. So the end result of "calories in" minus "calories out" would be less.

Ingredients:

Tofu, diced - 1/2 cup
Spring onions, cut into strips - 1/4 cup
Green bell pepper, Julienne - 1/4 cup
Celery, chopped - 2 tbsp
Home made veg stock - 1 1/2 cup
Egg whites - of 1 egg
Ginger, minced - 1 tsp
Garlic - 2 tsp
Olive + Sesame oil - 2 tsp
Tamarind sauce - 1tsp
Tomato sauce - 1 tbsp
Green chilly sauce - 1/2 tsp
Thai sweet red chilly sauce - 1 tsp
Salt to taste
Pepper - 1/4 tsp

Method:

In a pan pour oil and saute spring onions, bell pepper, celery ginger, garlic, tofu and saute for 2 minutes. Pour the stock and then all sauces, salt and pepper. Boil for 2 -3 minutes. Separate egg whites and whisk in the soup before turning off heat. Serve hot :)
