Homemade Granola

I got lot of requests for this recipe and especially all my healthy recipes are getting more pull. I am glad to see that the majority of population are health freaks like me ;) This recipe is one among my master pieces as per me, coz when I had the first bite, or in other words, in the Chef's tasting ceremony, I gave a hifi to myself :D
Such an easy recipe which came so good, just like store brought granola, and here I don't have a doubt on ingredients too. I can have it guilt free anytime when I crave for something sweet and is a healthy alternative to my cravings.

I had granola before too, but was never a great fan of it. May be because its a packed food, I used to stay away from it. Very lately, actually my US trip has made me a fan of granola, where I was having granola for almost every breakfast there, with lots of cranberries, walnuts and raisins. Oh that was a lovely time. I was missing the granola after the trip all these while.
So this week I was running out of my home made health bar and I thought I will try out something different, and then granola hit my mind. Per some recipes in internet there should be oven, maple syrup and all, which I cannot get hold of here now. I figured out the substitutes for everything and I was pretty much confident that I am gonna love it, whatever be the outcome.
To my surprise, it came out so well look wise when I cooked it in my non stick pan, and then there was a long wait to see how tasty it came out. The wait was really worth it. The first spoonful with a little doubt in my face and as I was chewing it and the taste buds recognizing the very old tasteful mornings. Wow, I said myself, "Swathy you made it", your version of granola. 
Of course now you are the master of your dish and you can grab anything you wanna put in it. I love cranberries, walnuts and raisins, so i used a good quantity of that. So now its time to checkout my recipe. Here it is! 




Ingredients:
Oats - 2 cups
Flax seed powder - 2 tbsp
Dried cranberries - 1/2 cup
Raisins - 1/2 cup
Chopped walnuts - 1/4 cup
Honey - 2 tbsp
Jaggery - 3 tsp
Water - 1/4 cup


Method:

Dry roast the oats until light brown. Add flax seed powder and cook for a minute. 

In another pan, pour honey, jaggery and water, and bring to a boil until the mixture turns sticky (just starts sticky, not too much). Add the oats to this and mix well, until combined. Turn off heat. Now add the dry fruits and nuts and mix. Allow it to cool completely. Once cooled, store it in a dry airtight container. Use as needed.








Note: You can have it with milk, yogurt or as it is. I love the flavored yogurt combination with some fresh fruits too.

The dish that made me feel so proud about myself. Sweet potato noodle soup prepared in authentic Japanese way, from the scratch. I really felt like a 5 ⭐️ chef 👩‍🍳 today .
