Sweet coconut pockets

During my Christmas vacation to hometown, my husband asked me to go stay at his place, as for government offices there is no work from home option and month end is really crucial for them. For me anyway it was planned off days and it doesn't really matters where I am, and it was an option to be with him. So right after the Christmas day, on 26th night we back packed everything, even some foods and headed to Thrissur.
I have been many times at Thrissur with him, and most of the times his colleagues would come and meet us at home. Everyone has only one demand, that they have heard a lot about my cooking from my hubby, my advertiser :P and of course they got to see my recipes and food photos in facebook, which made them believe strongly that I cook lot of things :D 

Likewise, this time when I was there, the same ask started the day I landed, and I find someway happy to cook things and make others eat, more than I eating them. So I encourage any such asks. The first day to office, I packed with him the plum cakes, cookies, scones everything I prepared for Christmas. People there so much liked it and they called me that they enjoyed the food and some praises too :P


The next day I was just doing my normal errands at home, preparing lunch for my hubby, as he told he will come home and have lunch. I was almost done with it and finally planning to relax a bit before my evening snacks preparation for my little boy, as he would come back so exhausted playing with kids over there in apartment. And when I was about to hit my bed for a little nap, there it is a call from my hubby saying he cannot make it for lunch and he will be reaching early in evening. Ok, fine! But the next statement was a little shocking, 3 of his friends are accompanying him and they wont have heavy food but snacks with tea only. It gave me a reflex inside, I sprang up to get out of bed to search my refrigerator for what is left to cook for them.

Of course my lil boy's evening snack is an option, but that alone won't help, coz I don't want to disappoint my kid, as I already promised him about it, and it was fish cutlets, one of his obsessions. So I thought I have to add a sweet dish, and I have a semiya mix  too. Along with that we had bought some purple grapes the other day for ball grape juice, which was again promised to Gauthu. So now it looks like a good list of snacking available for 3 people.

These sweet coconut pockets are such an experimentation, coz what I saw that time was lots of grated coconut in my fridge and its sweet, the other ingredients will fall in place :D And I didn't want to make any usual ones like coconut laddoo or burfi, so mixed the concept of samosa and burfi as filling and there it is born, the Sweet coconut pockets.
Ingredients:
For dough
All purpose flour - 1 1/2 cups
Butter cold cut - 3 tbsp
Salt - 1/2 tsp
Water to knead to stiff dough

Filling
Grated coconut - 1 cup
Ghee - 1/4 cup
Sugar - 1/2 cup
Milk powder - 1/4 cup
Cardamom powder - 1 tsp
Peanuts raw - 20 to 25 nos

Vegetable oil for frying

Method:

Mix all ingredients for dough and knead to a stiff but smooth dough. Keep aside covered with kitchen towel.

In a pan pour ghee and lightly roast grated coconut in it. This will take 5 minutes in medium heat. Now add sugar and cook till the liquid is evaporated. Add milk powder and cardamom powder. This will again make it slightly liquid, so cook till it starts taking lump form. Add peanuts and mix well. Allow this mix to completely cool.

Roll dough into thin discs and cut small rectangles out of it. Fill halfway, in one side of rectangle and seal the edges. Use water if needed to seal.

Heat vegetable oil in high and reduce temperature to medium low before putting the pockets. It will take only 2 -3 minutes for the pockets to get cooked.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this.
