Green Salad

I am catching up my healthy eating back this week, as the past 2 weeks were not so healthy, literally was eating out all the junks, donuts, mousse, milk shakes, ice creams, steaks... Oh my god the list never ends. I think I ate for a lifetime the past weeks.
So this week was supposed to be that break week, to retain back my healthy cooking and eating of course, and a big order was placed in Big basket, my favorite store.
As you guys would know by now, I am trying out salads every weekend as it was a big hit among my friends. Today also I have prepared a salad, which I would wish to call, a Green Salad, as the green color is overpowering others.
I think this is influenced by a YouTube video on healthy foods, on how they can keep you feel full and with less calories. If you want to view that video here is this link : Free foods. So greens are one among the first free foods which has enough nutrients but has negligible calories.

So I grabbed a bunch of veggies and also made a spicy green dressing and roasted my potatoes and beans in it. This time a combination of Indian and international veggies were used, and has the blend of all nutrients of which protein being more.  Nothing fancy, all of them are available in our near by markets, otherwise we have big basket for help and today's slogan is "more protein more fat burning" :)
So checkout this healthy green salad and the health freaks out there would go crazy with this recipe for sure.Drizzle it with some Ceaser salad and enjoy the heaven (recipe in upcoming post).

So below are the ingredients. I am attaching a link to some of the veggies, for helping you find out it's nutritional value.

Ingredients:
Potato boiled, cut into cubes - 1 medium
Kidney beans red speckled, soaked over night and pressure cooked - 1/2 cup (you can use any beans)
Snow peas with pod - 1 cup (Amarakka in Malayalam)
Broccoli florets - 1/2 cup
Green peas - 1/4 cup
Bell peppers, yellow, red and green, sliced - 1/2 cup
Zucchini, sliced- 1/4 cup
Carrot , grated - 1 medium
Basale leaf, chopped - 1/2 cup (Found to be a Karnataka favorite, similar to Spinach)
Pepper powder - 1 tsp
Salt to taste
Minced garlic - 8 nos
Olive oil - 2 tsp
Sesame oil 1 tsp
Green dressing:
Green chillies - 6 nos
Shallots - 5 nos
Fresh Parsley leaves - 2 tbsp

Method: 
In a pan pour oil and saute the Snow peas for a minute, add broccoli, green peas and saute for a min. Add garlic, salt and pepper. Now add all other except carrot and cook for 2 mins. Finally add carrot and saute for a min at high heat. Remove from heat to cool.


In another pan pour some oil and saute the potatoes and kidney beans. Pour the green dressing to it and cook till raw taste of green dressing is gone. 

Mix the potato and beans with rest of the salad while serving. I served with a home made vegetarian Ceaser salad, some black olives and jalapenos.

The dish that made me feel so proud about myself. Sweet potato noodle soup prepared in authentic Japanese way, from the scratch. I really felt like a 5 ⭐️ chef 👩‍🍳 today .
