Fresh strawberry yogurt

This weekend as most of the times, the mood was set on to "cooking healthy at home" and if you would have read my last post you would know there is a long list coming your way. So I thought, why not start with the dessert in the spread, keeping in mind all my friends having a sweet tooth 😃
I am a big fan of fruit flavored yogurt, coz I think its a healthy substitute for your ice cream cravings. So my weekly shopping cart would have a couple of yogurt added on every time. I love Epigamia and Danone flavors, which I feel is healthier than the other brands available in market. The rich smooth creamy texture of Greek yogurt with the fruit flavors and sometimes lucky to bite the fruit bits inside is a heavenly feeling. I can see the question mark on your faces, "Did we think this much while eating a yogurt". It is my way of enjoying things, I go to the intricacies to see the worth of a product, and since food is my passion, you can see such detailing about food in future too :) I know I am not alone in this battle though 😃



So you would be thinking, if you loved the store bought one this much, what was the inspiration for this recipe. And here goes some story telling. Almost everyone in my friends group know that I am a health freak, and how much logical reasoning I use for planning my diet. One fine day my friend has seen one of my posts where I had a photo of mine eating store bought yogurt. And there it was, she called me right up the moment and asked, you believe you have the best diet plan and you indulging in flavored yogurt !! OMG, I thought there is seriously some problem with that. Then she calm herself down and explained about the amount of sugar going in that, which sort of convinced me. But there is no verdict on the above products having that problem, but that made me think a lot on, why not I make it myself.


I started thinking about what all can go into that recipe; there must me plain yogurt, some sweetening agent, and flavor of fruits. Oh flavor again, why not fresh fruits itself!





So my first experimentation was with fresh figs, and it was an average outcome. Yes it tasted like yogurt, but the intricacies were missing, with the raw taste of fruits, which wasn't the real flavor. This time, the next level of experimentation, I boiled the fruits to avoid the raw taste and the sweetening agent, "The Brown sugar", organic brown sugar which is taken from molasses, which is a healthy alternative to our normal white sugar. And the third and the main base ingredient being the yogurt. I have even a healthy alternative for that too, Nestle slim dahi, which is a set curd having that creamy texture.

I am not boasting myself, really the outcome this time was awesome, and that too with minimal effort and a few ingredients. The same texture, flavor, aroma, which was divine melting in my mouth.  See now it is the actual guilt free substitute for ice cream, as I know, what all went inside this recipe and how much calories along the way 😛

So here it goes the recipe 😘


Ingredients:
Fresh strawberries - 1/4 cup
Water - 1/4 cup
Brown sugar - 2 tsp
Nestle skin dahi - 1/2 cup

Method:

Boil strawberries with water and brown sugar. Set aside to cool completely. Mix in Curd to it well. Your fruit flavored yogurt is ready ☺️





Notes: Mash the strawberries with back of spoon while cooking, and cook till thick consistency.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this.
