Introducing me, as a food blogger!

Hello ...

I am taking this opportunity to introduce myself as a food blogger.

I am not new to this place; most of my friends know me as a random blogger and I am pretty much active here. This time, I am starting on a blog focussed on food. I am a passionate cook who loves to experiment a lot in food, and I appreciate and embrace almost all cuisines world wide.

I am already representing a food site with my tested recipes in Facebook, but because there is no option to search for my recipes, I am sharing it here. I want all my readers to have easy access and my recipes handy 😊

As you can see, I am passionate about many things other than cooking, but cooking is something which always gives me pleasure. Cooking is my stress reliever, as one of my friend used to advice me, "Go bake a cake, you will be Alright"!

I am not yet sure to call myself as a food blogger, as I think there are ton of things yet to be learned and experienced as a cook and each day is a new learning to it. I might be missing many ethics and principles as a food blogger, but definitely I do have a bunch of them, which I am sure that any foodie would appreciate.

To mention, some of them are, don't label a food as healthy if it is not, be transparent with what you are cooking. Don't waste food :) I don't hate any ingredients of food, and I am really surprised when people are selective about some oils, coz I think the authentic recipe demands it's own authentic ingredients.

Just like Jeff Bezos' Day 1 theory, I think everyday is a brand new day with lot of opportunities to embrace, lots of hurdles to face, lots of learnings, and of course these needs an open heart to accept new things and has excitement to know more. I think whichever your area of interest may be, Day 1 really applies.

So with an open mind to embrace and learn new things, I am opening my food blog, "The Pink Café"  and expecting support from all my loved ones. Thanks a lot for all the support and love that you guys have been giving me, without which I wouldn't have got the confidence in opening up something like this, which is not even my main stream of job.

Ayala Pollichathu - Mackerel roast in plantain leaves

This is yet another traditional Kerala recipe, in which fish is roasted in plantain leaves. There is a two step process in cooking fish, first by shallow frying and then roasted inside a plantain leaf covered with masalas. So my experience with pollichathu was with Karimeen alone until this time, my favorite fish, which is called Pearl spot in English. All these while I haven't tried any other fish for this recipe. Bionico - Mexican Fruit Dessert

I was looking for a dessert which is simple and healthy for today and what came to my mind was Parfait. But the day was Mexican themed and I didn't want to deviate for the dessert part and spoil my theme plan ;) I was looking for similar desserts of Mexican origin, coz I wanted an easy healthy option and has base ingredients which I already have at home.  My search for the recipe ended in this great dessert from Mexico, The Fruit Bionico, which resembles parfait in many ingredients, just some difference in some of them. And I found an interesting factor in it and that strengthened my decision to go on with this. Yes, that is nothing but, our own freshly grated coconut :P Bionico is on sweeter side when compared to Parfait because of its sweetner condensed milk.
