Avial

Avial, how should I describe this dish. Yet another Mallu emotion it is. We even have a musical band in this great dish's name..lol. Avail is my ever time favorite and my Amma's sambar and avial with red rice combination is something that makes me drool thinking about it itself. I can feel that now too :P This combo is completed with mallu staple food "Fish fry". No one else in this world would understand the real feeling behind this combo other than a mallu for sure. I know I said a lot about us, I am a proud malayali :P This dish is an extravaganza of veggies, which can take any vegetable in it, with different variations around now in non veg side too, like fish avials and egg avials. Looks like chicken avial is something we can give a try, lol. Btw, hope you guys have heard about chicken sambar, which I am yet to taste though. Coconut cookies - Macaroons

In modern world, when we hear the name macaroons, the picture in mind would be the lacy, colorful, fancy cookies. But the traditional ones are not that eye candy, but the fancy ones cannot beat the taste of it. So here I m talking about coconut macaroons, which doesn't have any fancy look, but when you dip in your mouth...Mm it just melts in your mouth. So as you know Coconut, one of my obsessions I developed lately, and it started when I moved from Kerala to Bangalore. Coconut was never a public figure till then to me coz we have that in and out in everything we eat daily. But moving out of Kerala, I faced this question from every non mallu, "you guys are coconut eaters no". Was taken aback by that question first time, but lately got attuned to it. Then I realized, coconut needs support from mallus, and then have seen the other part of it the "health benefits". Now I have those YouTube videos to preach about Coconut to my gang of non mallus, and 

Calzones - Mushroom Gravy filled

Calzone's are my hubby's favorite, of course he loves all those curry stuffed breads. I also love baking them as you know my love for the smell of yeast and sugar in freshly baked breads. Gauthu likes it, but every time he gives up in half way coz it's too much for his little tummy to take :*  This time I made mushroom curry filled calzones and my little chef helped with the designs, you can see in the pictures below, the cute little hands making designs :* Mushroom is yet another favorite of mine, oh those lovely button mushrooms when sauteed is heaven! Gauthu was with me the entire preparation time, like an obedient student carefully listening when I was explaining the science of making bread, the two step proofing and stuffs.                                                     This was made as an evening snack, but of course this will cover up your dinner too because of its huge, filling and satisfying.
